Easily made ahead, easily transported, reheated, and also easily doubled. It literally takes 10 minutes to make it, just a long time to bake!
1 stick butter
8 oz. sour cream
2 eggs
1 box Jiffy Cornbread Mix
1 can cream style corn, undrained
1 can whole kernel corn, undrained
Spray 9 x 12 baking dish with non-stick spray, or butter the pan.
In large bowl, mix together eggs, sour cream and cornbread mix. Add both cans of corn with liquid and melted butter. Stir.
Pour into dish sprayed with pam. Bake at 350 degrees for 1 hour until set and edges begin to brown.
