This quiche is a hardy dish with great flavor.
2 cups milk
6 eggs
3/4 cup biscuit baking mix
1/4 cup butter (I use real butter for better flavor)
1 cup grated Parmesan cheese
1 10-ounce package chopped, frozen spinach, thawed and drained
(Squeeze out liquid; may use broccoli instead)
1 cup cubed cooked ham (I have used cooked Italian sausage as well.)
8 ounces cheddar cheese (Sharp cheddar produces great flavor.)
Preheat oven to 375 degrees.
Grease a 10-inch quiche pan or 8 x 11-inch glass baking dish. (Butter spray works well.)
Beat together eggs, baking mix, butter, and Parmesan cheese. (Batter will be lumpy.)
Stir in spinach, ham, and cheddar cheese.
Pour into prepared pan.
Optional: May add chopped mushrooms and chopped, cooked onions.
Bake in oven for approximately 50 minutes, or until eggs are set and top is golden.
